Pirattal is a popular Jaffna style dish for poultry, meat or vegetables. Named after the Tamil word “Pirattal”, meaning to toss and turn to coat well.
This dish is made by reducing the liquids by slow cooking in low heat to form a very thick gravy, while gently stirring to combine all the ingredients together and not let it stick to the bottom of the pan.
The creamy consistency is created by adding concentrated coconut milk, which when cooked on low heat thickens and combines the spices and the meat or vegetables together; and the oil released from the coconut milk lubricates and gives away a roasting aroma of the spices in the mix.
The cooked pieces of meat well coated in the thick curry, infused with the pungency of the chilli and the strong flavours of spices combined with the natural sweetness of the coconut milk makes a well balanced earthy aromatic curry.
A richly flavoured pot of Pirattal made with chicken or mutton is a quintessential dish for a Jaffna style meal served with rice and vegetable side dishes to share with family and friends.
